Healthy rhubarb-currant bake

It's rhubarb time, so we'd like to share a simple, quick and healthy recipe. This rhubarb casserole is gluten-free, has no added sugar and is fat-free. It's high in protein and low in carbohydrates, which means you can have several pieces and not worry about your figure.


  • 400 g 0.5% dry cottage cheese;
  • 2 a/l eggs;
  • 5 tbsp rice flour;
  • 1 Tl baking powder;
  • 4 large rhubarb stalks;
  • 150 g Greek yoghurt;
  • Vanilla Flavour Drops


Start by dicing the rhubarb and sprinkling with 20-30 drops of Vanilla Flavour Drops, then add the Greek yoghurt, mix everything and leave to infuse. For the dough, mix together the cottage cheese, eggs, rice flour and baking powder. Place the finished mixture on baking paper and spread it by hand over the whole baking tray, leaving thicker edges. Pour the yoghurt-rhubarb mixture over the prepared base and place in the oven at 180C for about 20 minutes. When the whole house starts to smell like freshly baked treats, you know the casserole is ready. Take it out of the oven, let it cool for a few minutes and enjoy.
